Paleo Chocolate Chip Cookies

Paleo Chocolate Chip Cookies
Ingredients:
2 cups almond meal, preferably from Trader Joes
1/4 cup coconut oil, melted
3 Tablespoons pure maple syrup
1/4 teaspoon sea salt
1/2 teaspoon baking soda
2 teaspoons vanilla extract
1/2 cup dark chocolate chips, preferably Enjoy Life brand
Directions:
Preheat oven to 350F. In a medium bowl, whisk together the almond meal, salt, and baking soda, then add the coconut oil, maple syrup and vanilla extract and mix well. Add the chocolate chips in at the end (because you don’t want the chocolate to melt from the melted coconut oil). Make into big mounds and don’t smush down. Should make 7-8 cookies. Cook for 9 minutes and let them finish
baking on the pan.
