Low Carb Lovers: Enjoy this Valentine’s Dinner & Dessert

Main Course – Steak & Lobster Surf & Turf

Ingredients (2 Servings)

  • 2 8-oz. Angus Beef boneless New York strip steaks, about 1″ thick
  • 2 Tbsp. olive oil
  • Kosher salt and fresh ground pepper for seasoning
  • 2  5-oz. fresh lobster tails (or thawed from frozen)
  • 20 asparagus spears
  • 9 cups Mixed leaf salad
  • 2 Tbsp melted butter
  • 1 Tbsp. fresh lemon juice
  • ¼ tsp. white pepper
  • ¼ tsp. garlic powder

Instructions

For the Strip Steaks:

  1. Preheat broiler and broiler pan.
  2. Drizzle each steak with olive oil and season with salt and pepper as desired.
  3. Place steaks on hot broiler pan, about 4 inches from heat.
  4. For medium doneness, broil 8-10 minutes, turning once through cooking if desired. The internal temperature should reach at least 145°F.

For the Lobster Tails:

  1. Whisk butter, lemon juice, pepper and garlic in a small bowl.
  2. Use kitchen scissors to split the top of the lobster tail lengthwise.
  3. Gently pull halves apart and pull meat from shells, starting at the broad end; leave meat attached to the shells.
  4. Brush lobster meat with butter mixture. Place tails on hot broiler pan, 4 inches from heat, leaving the oven door slightly open. Broil for about 5 minutes. Lobster is done when meat is opaque, firm to the touch and reaches an internal temperature of 145°F

For the Asparagus:

  1. Add butter to griddle pan over high heat.
  2. When it’s heated through, add the asparagus spears and season with salt and black pepper.
  3. Cook for 1-2 mins, turning occasionally until tender.

Serve together with a mixed leaf side salad and enjoy!

Dessert – Whipped Cream Strawberry Dessert

Ingredients (2 Servings)

  • 1 cup Heavy whipping cream
  • 4 strawberries You can cut them however you choose.
  • 1/2 tsp. sugar-free chocolate dusting
  • 1 stevia packet

Instructions

  1. Add heavy whipping cream to a cold bowl with stevia and whip on high for about 3 minutes or until firm peaks form.
  2. Cut berries how you please and add them to a glass. You can either decorate the glass with them, chop them, or simply sprinkle them on top of the cream.
  3. Put whipped cream in a piping bag.
  4. Pipe into two dessert glasses.
  5. Dust with chocolate and serve.
