Low-Carb Blueberry Protein Pancakes
These pancakes make for a great low-carb, protein packed breakfast!
1 scoop Quest Multi-Purpose mix
1 1/2 tbsp Splenda
1/2 tsp baking soda
Dash of vanilla extracts
1/3 cup liquid egg whites
Unsweetened coconut milk as needed
Mix the batter than add the blueberries. Spray your pan with non-fat cooking oil spray, add a little vegetable butter like I Can’t Believe It’s Not Butter”. Cook on each side until golden brown.
This recipe makes three big pancakes.
